Honey Fig Sourdough Toast with Sea Salt

Ingredients
  

  • 2 thick slices sourdough bread
  • 4 fresh figs sliced
  • 4 ounces ricotta or whipped goat cheese
  • 2 teaspoons honey plus more for drizzling
  • 1 tablespoon olive oil
  • pinch flaky sea salt
  • cracked black pepper
  • fresh thyme leaves optional

Method
 

  1. Toast the sourdough until golden and crisp at the edges.
  2. Stir the ricotta with 2 teaspoons honey until smooth. Spread over the toast.
  3. Top with sliced figs. Drizzle with olive oil and a little more honey.
  4. Finish with flaky sea salt, black pepper, and thyme if using. Eat immediately.

Notes

Real sourdough with an irregular crumb is critical. The fermentation is the point. Whipped ricotta creates a barrier between honey and toast that keeps it crisp.
